Honey Mustard/Curry Chicken

A very easy, delicious supper. Delicious served over plain rice.

3 Pounds of Chicken Breasts or Thighs. The recipe just says "chicken pieces", so I guess you could use bone-in chicken as well.
1/3 cup of butter, melted
1/3 cup of liquid honey
1/4 cup of Dijon mustard
4 teaspoons of curry powder

In a greased 9 x 13 pan, arrange arrange chicken in a single layer. Combine remaining ingredients, stirring until smooth. Pour over chicken. Cover and bake at 350 F, 20 minutes, basting once. Turn chicken over and baste again and bake for another 20 minutes. I would cook longer if the chicken is bone-in, making sure the chicken is fully cooked. Serve chicken over rice and cover with sauce....YUM!

Thanks for the recipe - I will give it a go tonight. Kirby is home for a week of swat-vac before her final Uni exams for the year. She's driving 400kms home so something nice and hot when she gets here will be nice.
I admire you so much for all the canning and preserving you do. Such hard work, but a sweet reward at the end of it all. Your panty must be heaven to see. Can we see a picture of all your hard work?

Thanks Niki - we had the chicken last night for dinner (I used bone-in chicken pieces and they were lovely and tender. Very yummy and so easy! That's definitely a keeper.
I also made a Sticky date pudding with butterscotch sauce for dessert. Yes, I am wicked! ..And it was gooood!

That sounds absolutely delicious! I might try that one day with a little bit of finely chopped sweet potato in the sauce.
